Homestyle spiced chicken is one of those comforting dishes that proves you don't need a long list of ingredients to make something delicious. A simple combination of onions, ginger, garlic, yogurt, and everyday spices gives the chicken a rich and satisfying flavor.

The recipe is easy enough for a regular weekday meal, yet flavorful enough to serve when guests come over. The spices are balanced rather than overpowering, allowing the natural flavor of the chicken to shine through.

Ingredients

  • 1 kg chicken, cut into medium-sized pieces
  • 3 medium onions, thinly sliced
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 2 green chilies, slit lengthwise
  • 1/2 cup plain yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1 bay leaf
  • 3 cardamom pods
  • 2 small pieces of cinnamon
  • 3-4 cloves
  • 1/2 cup cooking oil
  • Salt to taste
  • 1/2 cup hot water
  • 1 tablespoon chopped fresh coriander

Directions

1. Marinate the Chicken

Place the chicken pieces in a large bowl. Add the yogurt, a little salt, turmeric powder, red chili powder, and ginger-garlic paste. Mix everything thoroughly, making sure the marinade coats the chicken evenly. Set aside for 15-20 minutes.

2. Fry the Whole Spices

Heat the oil in a large pan or heavy-bottomed pot over medium heat. Add the bay leaf, cardamom, cinnamon, and cloves. Fry for a few seconds until fragrant.

Add the sliced onions and cook until they turn lightly golden. Add the green chilies and stir for another minute.

3. Add the Chicken

Add the marinated chicken to the pan and mix well with the fried onions and spices. Cook over medium heat for about 8-10 minutes, stirring occasionally.

4. Cook Down the Spices

Add the coriander powder and cumin powder. Stir well and continue cooking until the spices are nicely cooked and the oil begins to separate from the mixture.

If the mixture starts sticking to the bottom of the pan, add a small splash of water and continue cooking.

5. Cook the Chicken

Pour in about 1/2 cup of hot water and cover the pan with a lid. Cook over medium-low heat for 15-20 minutes, or until the chicken is completely tender.

Open the lid once or twice during cooking and give everything a good stir.

6. Finish the Dish

Once the chicken is cooked and the gravy has thickened, sprinkle in the garam masala. Cook for another 2 minutes, then turn off the heat.

7. Serve
